Easy merry berry sauce

So the new kitchen and I are becoming great late night friends. A packet of Dr Martys Crumpets and a overly robust punnet of strawberries inspired this latest rendezvous. I stumbled across what I think is the worlds simplest berry sauce/jam.

500g strawberries/berries
1/4 cup sugar
1/4 cup water
Juice of 1/2 lemon

Cut berries. Put all in nice pot.
Bring to boil.
Continue to boil for 20-30mins.
Put in suitably recycled glass vessel.

To really spice this up I added 1tbl spoon vanilla infused vodka and used raspberries as well as strawberries. I reduced the water by 1tbl spoon.

This doesn’t make a big batch of jammy goodness. Its all about quality not quantity. The consistency sits between a dessert sauce and jam.
